Executive Chef – Philip Anthony Leach
Phil Leach joined the Bigwin Team as Executive Chef in spring of 2006. Phil's background and experiences brings a plethora of culinary skills from working in Europe, and in other high-end private golf clubs in Canada. He studied classical culinary skills at Toronto's George Brown College and completed his apprenticeship at a Scarborough member's only golf club. Phil then took his knowledge to the United Kingdom where he worked in exclusive London restaurants and hotels in the areas of Knightsbridge, Soho and Westminster.
During 2006 Phil's completely rearranged our menus, adding more diversity and affordability. For 2007 you will see some revamping, keeping the most popular selections, with additions that will encourage you to experience new dynamic flavors and sensations. The new concept for 2007 will be an ‘evolving menu’, where three times during the season Phil and his culinary team will use patron feedback and seasonal food varieties to keep the menu selections fresh and vibrant. Keeping affordability in mind, we have incorporated a pre fixed option to the dining room menu grouping together appetizers, main courses and a dessert.
We saw some great events and themed dining nights during 2006. Drawing from this experience we’ll be adding some new ideas, while still maintaining our traditional favorites. Expect to see evenings devoted to Australian, Mediterranean and Middle Eastern cuisine. As always, we do encourage your input and suggestions.
Our first event of the year will be an exciting sampling dinner where Phil and the culinary team will devote an entire evening to the first phase of our evolving menu. They will prepare and serve reduced portions of our selections paired up with appropriate wine varieties.
